Visiting Nagari Kapau from the very popular Nasi Kapau

religion

Kapau rice shops are easy to find in and its surroundings. Derived from Nagari Kapau, which has passed down recipes and spices from generation to generation.

At first glance, the Nasi Kapau dish is almost the same as the food menu at the Nasi Padang stall. However, it turns out that Nasi Padang and Nasi Kapau are different, even though they are both from West Sumatra. This is a regional issue.

The name Nasi Padang is commonly used by restaurant owners who are generally from West Sumatra, especially from Padang. Meanwhile, Kapau rice is indeed used by food sellers from the Kapau area.

Nasi Kapau comes from Nagari Kapau, a small village in Tilatang Kamang District, Agam Regency, Bukittinggi. It is 4 kilometers from the sub-district capital and about 74 kilometers from the district capital.

Nagari Kapau has a beautiful nature, as well as other villages or villages in Tanah Minang. Most of the landscape of this village is rice fields.

The area of Nagari Kapau is recorded at 5.54 square kilometers or 5.78 percent of the total area of Tilatang Kamang District. The total population of the nagari, which consists of 12 jorongs or villages, was recorded at 3,129 people in 2019.

Most Kapau residents are farmers. There are also traders, especially food vendors, but they are few in number.

The most famous food from this area is of course Nasi Kapau. However, the actual number of rice traders from this area is few.

Although only a small number of sellers, but the name of the kapau is very well known. Kapau restaurants and restaurants are scattered in various corners of the archipelago. The name Nasi Kapau is also becoming increasingly popular with its mouthwatering jackfruit curry.

The name Nasi Kapau was used by the first generation of traders to distinguish their sales from other Nasi Padang.

The name continues to be used by every trader who really comes from Kapau or only has kinship with Nagari Kapau.

Kapau curry, of course, has existed since the existence of Nagari Kapau. However, its popularity among people outside Kapau is growing gradually.

Until around the end of the 1960s, gulai kapau was sold to the villages or placed in a pot on a rattan senggan that was held on the head. What is unique about nasi kapau is the appearance of this food.

Unlike in restaurants, each side dish or gulai nasi kapau is placed in a large stacked pan that is placed between the benches where the buyers eat with the seller. To scoop out the curry, use a spoon from a long-stemmed coconut shell, because one of the arrangements of the curry pots is too far for the hand to reach.

Historian Fadly Rahman, said that the presentation of Nasi Kapau today is no different from the past. Dozens of side dishes are placed in containers, then arranged in tiers with the seller’s position later on higher.

“Then the community eats together. Traders and food connoisseurs also interact with each other,” said Fadly some time ago.

Fadly said, Kapau rice is estimated to have existed since the 19th century, during the colonial era. The trail goes hand in hand with the tradition of wandering and trading among the Minang people. At that time, the women whose husbands left behind, set up a restaurant business.

They offer rice and various typical Minang side dishes, but there are several types of side dishes that are only available in Kapau such as gulai kapau and tambusu. Besides being sold in the Kapau area, these women also open stalls quite far from their home areas. Fadly said that many Nasi Kapau stalls were seen in Payakumbuh Market in 1911.

About the characteristic appearance of Nasi Kapau, which is arranged in layers, can be seen at the Nasi Kapau stalls at Slope Market, Bukittinggi City, about eight kilometers from Nagari Kapau. The place is known as Los Lambuang.

One of the rice shops that is quite famous here is the Nasi Kapau Uni Lis shop. He has been selling Kapau rice for three generations. Most connoisseurs of Nasi Kapau made by Uni Lis are celebrities in this country.

“The most distinctive thing is tambunsu. Not all rice sellers in West Sumatra have tambunsu. Only in Nasi Kapau,” said Nurfida, an employee of Uni Lis.

Nurfida said that Nasi Kapau Ni Lis had operated for three generations. This restaurant opens at 9 am, every day.

Kapau curry is very distinctive with its turmeric color. It’s also tasty and quite spicy. Sayur gulai consists of pieces of young jackfruit, bamboo shoots, cabbage, ferns, long beans and jengkol in a not too thick sauce.

Also very distinctive are tunjang or kikil curry, and intestine which is a mixture of mashed egg and tofu. In addition, of course there are other dishes that are no less exciting, ranging from beef jerky balado to chicken rendang.
